Cochon.jpgIf you're in need of a meat-centric road trip, head to Memphis on August 30 for the Cochon Heritage BBQ series. In its second year, the event, part of the Cochon 555 competition series, features seven competing chef teams each utilizing one whole heritage breed pig to create a variety of dishes. Participating chefs include Travis Grimes (Husk - Charleston), Chad Clevenger and Nick McCormick (Alma Cocina/Tap A Gastropub - Atlanta), Michael Scelfo (Alden & Harlow - Boston) and Memphis chefs Craig Blondis (Central BBQ), Ryan Trimm (Southward/Sweetgrass), Jackson Kramer (Interim Restaurant) and Rick Farmer and Miles McMath (St.Jude's Culinary Team).
