Here now are more details on The Flipside, the latest in a string of new and upcoming restaurant openings on 12 South. Jason Sheer, founder and former partner of popular nightlife spot Tin Roof and co-owner of The Flipside, spoke with Eater regarding the project. On the restaurant interior, Sheer says they're going for a "1950s Palm Springs-style vibe, very retro-modern, very clean." Vintage bicycles will feature prominently in the design, with patrons having the option to purchase them right off the wall. And the name "Flipside references the B-side of an album, so 50s and 60s tunes on vinyl" will dominate the playlist. Here's what Sheer had to say on what to expect coming out of the kitchen:
The main item on the menu will be 'Jack's Best Chicken.' We do pounded chicken, real thin, season it, give it an egg wash, cover it in Italian seasoned bread crumbs and pan saute it in olive oil. And we do it about 15 different ways, each one with different toppings, from Sriracha and peanut butter to parmesan, to a brunch one topped with two fried eggs, bacon and cheddar cheese. You can use a knife and fork or a special original recipe bun from Provence Breads. We'll also feature options for those that don't want chicken, as well as fun appetizers, salads and milkshakes.
The restaurant will have a full bar serving beer, wine and cocktails, the latter in 1950s glassware that Sheer has been collecting, as well as a tea and coffee program. A building permit is expected any day now, and they are shooting to open around the end of April/beginning of May.
