Cochon Butcher Is Indeed Headed for Germantown

Those pesky rumors are finally confirmed: New Orleans-based James Beard award-winning chef Donald Link is indeed expanding his Cochon Butcher concept to Nashville, as The Times-Picayune brings word that the casual sandwich and butcher shop will open in the Germantown Market project next spring. Having first hinted at Nashville expansion plans last year, the venture is a partnership between Link Restaurant Group, which owns and operates other New Orleans restaurants such as Cochon and Peche Seafood Grill, and Fresh Hospitality, the ever-expanding Nashville-based restaurant group whose portfolio includes Martin's Bar-B-Que Joint, Octane Coffee and Little Donkey, with the latter two concepts slated to join Cochon Butcher in the development project. Link sites this partnership, in which 'Fresh Hospitality will provide the manpower to run the restaurant after the New Orleans based staff gets the location up and running[,]' along with the ability to provide their own meat through the Fatback Pig Project, as central to their decision to expand to Nashville.
