Levon Wallace Is Leaving Louisville to Run Nashville's Cochon Butcher Outpost

He'll leave the restaurant in March to run Donald Link's New Orleans' transplant.

Big news out of Louisville today, as Insider Louisville reveals that Levon Wallace, executive chef at Proof on Main in the 21c Museum Hotel, will soon be Nashville-bound. Wallace, who lived and worked in Nashville prior to heading to Louisville in 2012, says that he will leave the restaurant in March to be the chef at Cochon Butcher, the popular New Orleans restaurant (and recent Eater National 38 selection) from Donald Link that's slated for Fresh Hospitality's Germantown Market project.

Wallace seemed to have been visiting Nashville more frequently over the past six months, including an appearance as a guest chef at September's Music City Food & Wine event. That, coupled with his time already spent here, doesn't make this a huge surprise.
