Never ones to sit still for long, Staci and Dan Bockman, the owners of Germantown's 312 Pizza Company, have plans to add something a little different to their other Germantown spot, chocolate shoppe Tempered European Indulgence: an absinthe bar.
Called "The Green Hour," a reference to the spirit's popularity in France in the mid-1800s, it will take over Tempered's roughly 30-seat space after regular business hours on Thursday, Friday and Saturday nights, offering absinthe-focused cocktails, along with a small selection of traditional cocktails, high gravity beer and wine.
And Jeremiah Blake, one of Nashville's top barmen who's probably best known for his time spent as the opening head barman at East Nashville's Holland House Bar and Refuge, will be running the cocktail program. He tells Eater that he looks at this as an opportunity to "try and change people's perspective on absinthe," offering an "ever-changing, high level yet approachable" list of cocktails.
Blake says that they are currently aiming to open on Halloween. And while details regarding open hours are still being finalized, Blake says that a green light will be lit in the window anytime The Green Hour is open.
