SoBro's Bar Sovereign is now open for business, having quietly kicked things off last Wednesday before Christmas. The eclectic cocktail bar is the project of local contractor Sean Hinton and Gabe Fuenmayor, formerly of food truck Wrapper's Delight.
Hinton tells Eater that they are "not trying to be like any other bar in Nashville, just doing what we like," emphasizing that "change is the key" to making Bar Sovereign what they envisioned. Which means constantly rotating cocktail, beer and food offerings, as well as changes to the unique 53-seat interior, including art from Lazarides Gallery in London that will also regularly rotate.
Currently they are "tinkering" with the cocktail menu, which Hinton says will continue to expand. They also have four draft beer taps, one of which will always feature Guinness and the others local brews.
As for the food, right now they are serving a few small plates, but plan to expand the menu after the new year along with offering regular lunch hours.
