UPDATE 8/28/15: Cochon Butcher's Nashville opening has been postponed until Monday, August 31. From their Facebook page: "Bacon friends, we need a couple more days to put on finishing touches. So: Our NEW OPENING DAY will be this MONDAY, 8/31/15! Hope to see y'all then! We can't wait to meet all of y'all!!"
UPDATE 8/13/15: Official word is now out, and the opening date of Saturday Monday, August 29 31 is set in stone. According to a release, the restaurant will be open seven days a week for lunch and dinner. Hours will be 10 a.m. to 10 p.m. Monday through Thursday, 10 a.m. to 11 p.m. Friday and Saturday, and 10 a.m. to 4 p.m. on Sundays.
Well it looks like the wait is legitimately almost over, as Cochon Butcher Nashville, the anchor restaurant for Fresh Hospitality's Germantown Market development, appears to be headed for an August 29 opening. A hiring notice for the first expansion of Donald Link's popular New Orleans' storefront was posted earlier today on Craigslist, with a stated opening date of Saturday, August 29.
Sources familiar with the project tell Eater that the menu offerings will be virtually identical to those at their original location. So mark your calendar, and be sure to check back regularly for more updates.
