Meat Emporium Cochon Butcher Opens Today in Germantown

Get ready to have the 'meat sweats.'

It seemed as though it might never happen, but today is the day, as chefs Donald Link, Stephen Stryjewski, Levon Wallace and the crew at Fresh Hospitality get ready to open the doors at Germantown's Cochon Butcher to the public at 11 a.m. this morning.

What to expect? Essentially the same menu as the New Orleans' original (that's a good thing), offering sandwiches, small plates and sides, along with house-made meats and sausages and desserts. The bar features a small but varied list of cocktails, wine by the glass and bottle, and draft and bottled beer.

The space, with a large covered outdoor patio, a separate bar and a number of four-tops inside, is no-frills, but you're not there for the scenery.

Planned hours are 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. on Friday, 10 a.m. to 11 p.m. on Saturday and 10 a.m. to 4 p.m. Sundays. So check it out, and do report back on any first impressions.
