From fast-casual concepts to industrial cocktail bars, there is a little bit of everything. So check out Eater Nashville's Most Anticipated Winter Opening Report and start marking your calendars.

Bastion

Location: Wedgewood-Houston; 434 Houston Street; website.
Key Players: Josh Habiger, Strategic Hospitality
Projected Opening: Winter
Characteristic of any project Strategic Hospitality has been involved in, details have been few and far between. But what we do know is that Catbird Seat/Patterson House alum Josh Habiger has partnered with the busy restaurant group to open an "unpretentious" bar in Houston Station in the We-Ho neighborhood. Habiger tells Eater that current Patterson House barman Michael McCollum will be running the beverage program, and that an as-yet-undecided restaurant component to the project will be in the works further down the line.

Location: Melrose neighborhood; 2222 Franklin Pike; website.

Projected Opening: Early February
The team behind Sinema is doubling down in the Melrose area, opening this fast casual restaurant focusing on chicken and seafood. Sinema executive chef Dale Levitski recently brought on former Chauhan Ale & Masala House chef de cuisine Vasisht Ramasubramanian to helm the kitchen. Batched cocktails and boozy frozen drinks are also part of the plan.

Key Players: Alexis Soler, Britt Soler 
Projected Opening: February
This Edgehill Village cocktail bar from No. 308 alums and sisters Alexis and Britt Soler has been in the works for a year now, but there appears to be light at the end of the tunnel. Situated in the property's old boiler room, expect a top-end beverage program in what should be one of the most unique restaurant and bar spaces in town.

Proper Bagel

Projected Opening: Literally any minute
This family-owned Belmont bagel shop wants to open SO BADLY. Why just yesterday they posted on their official Instagram account that they were aiming for a soft opening today, but that appears to have not been the case. But when they finally do fling the doors open, there will be bagels and bialys, Barista Parlor roasted coffee, housemade pastries, bagel sandwiches and more.

Vui's Kitchen

Key Players: Vui Hunt, Fresh Hospitality
Projected Opening: February
Construction is well underway on this fast-casual Vietnamese concept from Juice Bar co-founder/owner Vui Hunt. Hunt, who owned and operated Veggieland in Atlanta, Ga. before making the move to Nashville, will act as chef and partner, offering her versions of traditional Vietnamese dishes such as pho and banh mi, along with monthly rotating specials.
