It didn't take long for downtown fine dining stalwart Capitol Grille to find a replacement for their recently vacated executive chef position, as Texas chef Cory Untch has been tapped to helm the kitchen.
Untch, who fills the void left by long tenured executive chef Tyler Brown after his departure at the end of last October, made the move to Nashville in mid-December. He previously worked as executive chef at the well regarded restaurant at The Inn at Dos Brisas outside of Houston, Texas. Prior to that he was executive sous chef and executive chef at Hotel Ella in Austin, Texas.
While it's obviously still early, this appears to be a home run hire, with Untch bringing a high level of fine dining experience to the restaurant. And could this herald the return of a tasting menu option, which Untch would have had a great deal of experience with at The Inn at Dos Brisas? Be sure to check back for more details.
