Details are now out for the second of chef Maneet Chauhan's upcoming new restaurants, as Tànsuŏ ('to explore' in Cantonese), an Asian-inspired eatery with a focus on Chinese cuisine, will join previously announced The Mockingbird Nashville later this fall in the space next to Chauhan's current Gulch restaurant.
And to oversee the concept and menu creation, Chauhan and her recently formed Morph Hospitality Group have tapped veteran New York City chef Chris Cheung. Currently the chef/owner of East Wind Snack Shop in Brooklyn, Cheung's experience has taken him from his uncle's restaurant in Chinatown to the kitchens of celebrated chef Jean-Georges Vongerichten's now-shuttered Vong, as well as his eponymous three Michelin star restaurant, with stops at Nobu, Ruby Foo's and other notables along the way. He even spent time as the banquet cook for small farming and fishing villages near Shanghai.
Cheung plans on splitting his time between here and New York, and has installed chef and protege Alex Sidorov to oversee the day-to-day of the restaurant.
