Cochon Butcher’s Levon Wallace Headed to 21c Museum Hotel Nashville

He’ll rejoin the group at the end of October

Things are coming full circle for current Cochon Butcher chef Levon Wallace, as he will be reuniting with the 21c Museum Hotels group at the end of next month as executive chef of the new restaurant at their currently under construction Nashville location.

Wallace, who was previously at the helm of Proof on Main in the group’s Louisville hotel for two years, made the move back to Nashville in March 2015 to run the Germantown outpost of Donald Link’s Cochon Butcher, which opened its doors just over a year ago. Wallace tells Eater that the transition “feels very natural because the relationship with 21c never really stopped,” and that he’s energized and excited to be working with them again.

Specifics on the as-yet-unnamed restaurant are still few, but representatives for 21c Museum Hotels say that it will have seating for 120, with a U-shaped bar as a focal point in the main dining room. There will also be private dining, as well as a lounge area with additional high-top seating. A spring 2017 opening for the hotel and restaurant is the goal.
