Gray & Dudley Opening in the 21C Museum Hotel Next Tuesday

It will be Levon Wallace’s return to fine dining

A hotel project three years in the making is preparing to debut its first phase next week, as restaurant Gray & Dudley will open in the 21c Museum Hotel on Tuesday.

The opening signals executive chef Levon Wallace’s full circle return to the 21c family, as he previously was at the helm of Proof on Main in the group’s flagship Louisville hotel for two years. He then moved back to Nashville in March 2015 to run the Germantown outpost of Donald Link’s Cochon Butcher, a post he left back in the fall to begin planning for Gray & Dudley.

Wallace tells The Tennessean that he will be serving what he calls “‘inspired comfort food’ that pairs fresh and regional ingredients with simple cooking techniques.” The restaurant will open next week with dinner only, but breakfast and lunch service will be added once the hotel opens its doors sometime in May.
