Slow Hand Coffee Owners Celebrate Opening Milestones

Slow Hand Coffee owners Nick and Audra Guidry announced in February that their popular downtown cafe is headed to the east side, along with new establishment Pelican & Pig. And they recently took to Instagram to show off the progress on the restaurant. They wrote, “We realize we haven’t posted much in a while but we’ve had some pretty huge things crossed off our to do list in the last week. Hoods are up, grease trap is installed, and our power is being connected today! We’re very excited to share more with you and to get in the kitchen!” With all that equipment, it won’t be long until the public gets to see what Pelican & Pig is all about.

The Guidry’s full-service restaurant, located at 1012 Gallatin Ave. next to upcoming island lounge Pearl Diver, will focus on wood-fired cooking via a raised brick grill, which will be used for everything from smoking meats over embers, to ash-roasting vegetables and hearth-baking breads. Shareable sides will lean heavily on local, seasonal vegetables. The dessert menu will offer classic sweets, along with new twists on old favorites. And the beverage program will consist of a “small and specialized” cocktail, beer, and wine selection, as well as coffee from Counter Culture Coffee.
