A much needed additional healthy option is coming to Nashville in spring of 2020 — when Greenery Co. opens in the former home of beloved Provence Breads in bustling Hillsboro Village.
The fast-casual salad and otherwise healthy spot comes from sisters and co-owners Caroline Gaston and Whitney Abblitt — both newcomers to the restaurant industry who have backgrounds ranging from fashion to finance.
On the menu (from Austin-based chef Barclay Stratton), look for a selection of salads, bowls, snacks, and sweet treats, alongside a variety of nonalcoholic drinks, all offered at what they promise to be “approachable prices.”
The Provence space at 1705 21st Avenue South was dear to the sisters in its former life. “Whitney and I both spent many hours in Provence when we were students at Vanderbilt,” says Gaston. “We were heartbroken when the owners decided to close the doors, and consider ourselves incredibly lucky to be in a position to fill that space with something that can offer the neighborhood fresh and healthy food and a warm, inviting experience—all while paying homage to the very café we loved so much as students.”
Gaston and Abblitt say with the opening of Greenery Co. they’re making it a priority to develop a healthy work environment, with an added focus on personal and professional development for employees.
Greenery Co.’s interior design elements will draw inspiration from residential interiors in an effort to create a warm and welcoming experience for guests. A neutral color palette of paint and fabrics coupled with gold and brass accents will outfit the light-filled space to feel like home for guests.
