Step Inside Santo — Green Hills’ New Modern Mediterranean Restaurant

Panisse, merguez, and more

Santo, the new upscale modern Mediterranean restaurant at the corner of Richard Jones and Hillsboro in Green Hills, is opening Friday, May 3.

Located at 3998 Hillsboro Pike, the new restaurant comes from the owners of popular 12 South Lebanese bistro, Epice.

Jason Heiman made the move to Music City from Chicago to sign on as executive chef at Santo, while Nashville’s Matt Clement (most recently at Makeready) steps in as sous-chef.

At lunch, shared plates like panisse, tuna carpaccio and lamb tartare lead the menu, followed by a selection sandwiches, salads, and mains including Moroccan chicken and steak frites.

For dinner, the menu is a little larger — adding spicy roasted black mussels with harissa butter and merguez to the starters selection, among others. For meat eaters, there are plenty of entree options from duck cassoulet, quail, and branzino with mojo verde sauce, to a crab galette served with crispy potatoes , and steak and roasted marrow. Ricotta gnudi with saffron brodo and three salads are vegetarian-friendly main options.

On the bar side, there’s a carefully curated wine menu and classic cocktails.
