Nashville hot chicken? Yes, of course. Nashville bagels? Not so much. Music City isn't exactly known for carbs in that form, but it’s come into its own — especially amid the pandemic — as folks started boiling their own bagels at home when trips to New York were not an option to score the breakfast staple. In addition to a few bakeries devoted to the craft, several independent local bakers are offering the delicacy for pickup, home delivery, or sale at farmers markets. Here are eight great options for fresh bagels around town.

The new New York–style bagel shop in Midtown comes from New Jersey-born Hector Sanchez, who has over 40 years of experience in the bagel business. Sanchez serves up real-deal hand-rolled bagels plus fried Taylor ham (or pork roll, depending on who you ask) breakfast sandwiches. Sanchez uses high-gluten flour to give his bagels proper elasticity, then adds sugar, yeast, and water before leaving them to proof overnight, and then boiled fresh for optimal chewiness
